Black tea- the most common tea in North America. It is produced when withered tea leaves are rolled and allowed to oxidize and dry, developing natural flavor, color, and body in the leaf. Boasting numerous health benefits, black tea contains about half the caffeine of coffee and twice that of green tea. You can buy black tea loose-leaf or in tea bags and the drink is popular iced or hot as a breakfast tea, often enjoyed with sugar, stevia, milk, or lemon.
Pu-erh tea -aged Chinese teas. They undergo a bacterial process, not unlike bleu cheese. This produces an earthy, peaty aroma and distinctive flavor. These teas are highly-prized in China, especially ones that have been aged for 35 years or longer. Some pu-erh teas are formed into tuo chas, or bird nests, and can weigh as much as three kilograms.
